A vegan version of the beloved Austrian dessert, this Extra Fluffy Kaiserschmarrn uses aquafaba and plant-based ingredients to create the signature light and fluffy texture. This torn pancake dish features plump raisins and a golden-brown caramelized exterior, while maintaining its characteristically soft interior. Dry Ingredients Instructions

  1. Combine flour, corn starch, baking powder, vanilla sugar, and salt in a bowl. Mix well to combine.

Wet Ingredients Instructions

  1. Heat 40ml of the soy milk and pour over raisins. Set aside to soak. (Raisins are optional and can be omitted if preferred).
  2. In a clean bowl, whip the aquafaba until white and firm peaks form.
  3. In another bowl, combine the remaining soy milk and yoghurt.
  4. Gently fold the whipped aquafaba into the milk-yoghurt mixture.
  5. Gradually fold in the dry ingredients mixture until you have a smooth batter, being careful not to overmix.
  6. Stir in the apple cider vinegar.
  7. Drain the soaked raisins and fold them into the batter.

Cooking and Serving Instructions

  1. Heat coconut oil in a large pan over medium heat.
  2. Pour the batter into the heated pan and cover with a lid.
  3. Cook on medium heat until the bottom is golden brown.
  4. Flip the pancake in one piece and cook for about 2 minutes.
  5. Using two spatulas or a fork, tear or cut the pancake into rough pieces.
  6. Continue cooking, stirring occasionally, until all pieces are golden brown.
  7. Serve hot, dusted with powdered sugar or topped with your favorite jam.
