Dry Ingredients Instructions
- Combine flour, corn starch, baking powder, vanilla sugar, and salt in a bowl. Mix well to combine.
Wet Ingredients Instructions
- Heat 40ml of the soy milk and pour over raisins. Set aside to soak. (Raisins are optional and can be omitted if preferred).
- In a clean bowl, whip the aquafaba until white and firm peaks form.
- In another bowl, combine the remaining soy milk and yoghurt.
- Gently fold the whipped aquafaba into the milk-yoghurt mixture.
- Gradually fold in the dry ingredients mixture until you have a smooth batter, being careful not to overmix.
- Stir in the apple cider vinegar.
- Drain the soaked raisins and fold them into the batter.
Cooking and Serving Instructions
- Heat coconut oil in a large pan over medium heat.
- Pour the batter into the heated pan and cover with a lid.
- Cook on medium heat until the bottom is golden brown.
- Flip the pancake in one piece and cook for about 2 minutes.
- Using two spatulas or a fork, tear or cut the pancake into rough pieces.
- Continue cooking, stirring occasionally, until all pieces are golden brown.
- Serve hot, dusted with powdered sugar or topped with your favorite jam.
Notes
- Make sure the bowl for whipping aquafaba is very clean (no grease) so it whips properly.
- Fold gently to keep the batter airy—this is what makes it extra fluffy.
- Keep heat medium so the inside cooks through before the outside gets too dark.
- If flipping in one piece is hard, you can cut it in half first, flip both halves, then tear.
