Instructions

  1. Peel and roughly chop the onion, potato, and carrots. Slice the celery.
  2. Set the Instant Pot to Sauté mode and add the olive oil. Once hot, add the chopped onion and celery. Sauté for 2-3 minutes until the onion begins to soften.
  3. Add the chopped potato and carrots to the Instant Pot. Stir to combine with the onion and celery.
  4. Pour in the vegetable broth, ensuring all vegetables are covered. You may need to adjust the amount of broth depending on the size of your Instant Pot.
  5. Close the Instant Pot lid and set the valve to sealing position. Cancel the Sauté mode and set the Instant Pot to Manual/Pressure Cook on High pressure for 2 minutes.
  6. Once the cooking cycle is complete, allow for a natural pressure release for 5 minutes, then carefully do a quick release for any remaining pressure.
  7. Open the lid and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches to puree.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Serve hot, optionally garnished with a swirl of cream, a sprinkle of fresh herbs, or a few croutons for added texture.
  10. Store any leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
