Instructions
- Cook the buckwheat groats according to the package instructions. Once done, drain them and set aside.
- While the buckwheat is cooking, finely chop the onion and slice the mushrooms.
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, stirring constantly to prevent burning.
- Add the sliced mushrooms to the pot and cook until they release their juices and start to brown, about 5-7 minutes.
- Pour in vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer and let it cook for about 20 minutes.
- Stir in the cooked buckwheat groats and allow them to heat through for about 5 minutes.
- Add 1 tablespoon of cream and stir well. Season the soup with salt and pepper to taste. Ladle the hot mushroom soup into bowls and serve immediately. Enjoy the rich, earthy flavors!
