Instructions

  1. Rinse the quinoa under cold water and cook it according to the package instructions. Once done, set it aside.
  2. While the quinoa is cooking, chop the carrot into small pieces and break the cauliflower into small florets. Finely chop the parsley.
  3. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes.
  4. Add the minced garlic and cook for another minute, stirring constantly to avoid burning.
  5. Add the chopped carrot, cauliflower florets, and vegetable broth to the pot. Stir well and bring the mixture to a boil.
  6. Once boiling, reduce the heat to a simmer and cook for about 20 minutes, or until the vegetables are tender.
  7. Stir in the cooked quinoa and let it simmer for another 5 minutes to heat through.
  8. Season the soup with salt and pepper to your taste. Serve hot, garnished with the chopped parsley for a fresh touch.
