Instructions

  1. Wash the savoy cabbage thoroughly and remove the tough stems. Chop the savoy cabbage leaves into small pieces.
  2. Peel and finely dice the onion.
  3. Peel the carrots and grate them using a box grater or food processor.
  4. Wash the parsley and finely chop it, including the stems.
  5. In a large pot, heat the olive oil over medium heat.
  6. Add the diced onion to the pot and sauté for about 5 minutes, until softened and translucent.
  7. Add the grated carrots to the pot and cook for another 3-4 minutes, stirring occasionally.
  8. Pour in the vegetable broth and bring to a boil.
  9. Once boiling, add the chopped savoy cabbage to the pot. Reduce the heat to low and simmer for about 15 minutes, or until the savoy cabbage is tender.
  10. Stir in the chopped parsley and cook for an additional 2 minutes.
  11. Season with salt and pepper to taste.
  12. Remove from heat and let it cool for a few minutes before serving.
