Instructions
- Rehydrate the soy slices: Place 200 grams of TVP soy slices in a bowl and cover with hot vegetable broth. Let sit for 15-20 minutes until fully rehydrated, then drain and squeeze out any excess liquid. Reserve the broth for the gravy.
- In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Stir in 1 tablespoon of tomato paste, 2 tablespoons of soy sauce, 1 teaspoon of mustard, 1 teaspoon of sweet paprika, 1 teaspoon of smoked paprika, and 0.5 teaspoons of dried thyme. Cook for 2-3 minutes, stirring frequently.
- Sprinkle 1 tablespoon of flour over the mixture and stir well to combine. Cook for another 1-2 minutes to remove the raw flour taste.
- Gradually add the reserved vegetable broth while stirring continuously to avoid lumps. Bring the mixture to a simmer and cook for 5-7 minutes until the gravy thickens.
- Add the rehydrated soy slices to the pan, stirring to coat them well in the gravy. Simmer for another 10 minutes, allowing the flavors to meld together.
- Season with salt and pepper to taste.
