  1. Rehydrate the soy slices: Place 200 grams of TVP soy slices in a bowl and cover with hot vegetable broth. Let sit for 15-20 minutes until fully rehydrated, then drain and squeeze out any excess liquid. Reserve the broth for the gravy.
  2. In a large pan, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in 1 tablespoon of tomato paste, 2 tablespoons of soy sauce, 1 teaspoon of mustard, 1 teaspoon of sweet paprika, 1 teaspoon of smoked paprika, and 0.5 teaspoons of dried thyme. Cook for 2-3 minutes, stirring frequently.
  5. Sprinkle 1 tablespoon of flour over the mixture and stir well to combine. Cook for another 1-2 minutes to remove the raw flour taste.
  6. Gradually add the reserved vegetable broth while stirring continuously to avoid lumps. Bring the mixture to a simmer and cook for 5-7 minutes until the gravy thickens.
  7. Add the rehydrated soy slices to the pan, stirring to coat them well in the gravy. Simmer for another 10 minutes, allowing the flavors to meld together.
  8. Season with salt and pepper to taste.
