  1. Place the TVP soy slices in a bowl and cover with hot water. Let sit for 30-45 minutes until fully rehydrated, then drain and squeeze out any excess liquid.
  2. Set up three separate bowls: one with the gluten-free flour, one with the chickpea flour mixed with water to create a batter, and one with the breadcrumbs.
  3. Dredge each rehydrated soy slice first in the gluten-free flour, then dip into the chickpea flour batter, and finally coat with breadcrumbs.
  4. Preheat your air fryer to 200°C (390°F). Spray the air fryer basket with olive oil. Place the coated soy slices in the basket in a single layer, ensuring they do not overlap. Spray the tops of the soy slices with olive oil.
