Instructions

  1. Peel and chop the potatoes and carrots into small cubes.
  2. Boil the potatoes, carrots and green peas in a pot of salted water until they are tender but still firm, about 10-15 minutes. Drain and let them cool completely.
  3. In a large bowl, combine the cooled potatoes, carrots, and green peas.
  4. Add 100 grams of vegan mayonnaise and 100 grams of vegan yoghurt to the bowl. Mix well until all the vegetables are evenly coated.
  5. Season with salt and black pepper to taste. Mix again to ensure the seasoning is evenly distributed.
  6. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
