Instructions
- Dice the onion and finely chop the carrots.
- In a large, deep pan or Dutch oven, heat the olive oil over medium heat. Add the diced onion and carrots, and sauté for about 5 minutes until the onion is translucent.
- Add the vegan minced meat to the pan and cook for another 3-4 minutes, stirring frequently.
- Add the arborio rice to the pan and stir for 1-2 minutes to toast the rice slightly.
