Instructions

  1. In a saucepan, bring the soy milk to a boil.
  2. In a separate bowl, mix the flour with a small amount of the boiling milk to create a smooth paste.
  3. Gradually add the flour paste to the boiling milk, stirring continuously to prevent lumps.
  4. Let the mixture boil for about 5 minutes while stirring, then remove from heat and allow it to cool to room temperature.
  5. In a separate bowl, cream the vegan butter with the powdered sugar until light and fluffy. Add the rum and mix well.
  6. Once the milk mixture has cooled, combine it with the creamed butter mixture, stirring until smooth to form the cream filling.
  7. Lay one wafer sheet on a flat surface and spread half of the cream filling evenly over it.
  8. Place the second wafer sheet on top of the cream, spread the remaining cream filling over it, and top with the third wafer sheet.
  9. Place the final wafer sheet on top, pressing down gently to ensure the layers stick together.
  10. Dust the top of the cake with a little powdered sugar.
  11. Cover and allow the cake to rest overnight so the flavors can meld and the wafers can absorb the cream.
  12. Cut into squares and serve.
