Instructions
- Rinse the barley under cold water. Cook according to the package instructions, then drain and set aside.
- While the barley is cooking, prepare the vegetables: chop the onion, leek, celery, carrot, and cauliflower into bite-sized pieces. Tear the kale into small pieces and finely chop the parsley.
