Big Strawberry Cups

Instructions

  1. Refrigerate the canned coconut milk overnight so the cream separates from the water (do not shake or rotate the can).
  2. Put the strawberries and sugar in a saucepan and cook until the sugar dissolves and the strawberries are soft. Cool slightly, then puree in a food processor.
  3. Prepare 1 package of agar according to the package instructions and mix with the strawberry puree. Pour the strawberry jelly into the cups and refrigerate for at least an hour.
  4. In a pan, mix together the vegan strawberry yoghurt, canned coconut milk (only the cream), and strawberry jam. Heat gently, but do not boil. Prepare the second package of agar according to the package instructions and mix with the yoghurt mixture.
  5. Pour the yoghurt mixture over the set strawberry jelly in the cups and refrigerate for 30 minutes.
  6. Whip the vegan whipped cream, put it in a piping bag with your preferred nozzle, and decorate the cups.
  7. Refrigerate overnight. Store in an airtight container for up to a week.

Notes

  • Don’t shake the coconut milk can before chilling—this helps you scoop clean coconut cream.
  • Follow your agar package instructions closely (some types need a short boil to activate).
  • Let the strawberry layer set fully before adding the yoghurt layer for sharp separation.
  • For a smoother strawberry layer, puree thoroughly (and strain if you prefer, though it’s optional).
