Instructions
- Start by peeling and chopping the chayote into small cubes. Dice the onion finely.
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent and soft.
- Add the minced garlic to the pot and cook for another minute, stirring continuously to avoid burning.
- Add the chopped chayote and pour in vegetable broth. Stir everything together and bring the mixture to a boil.
- Once it reaches a boil, reduce the heat to low and let the soup simmer for about 20 minutes, or until the chayote is tender.
