Instructions
- Start by peeling and chopping the chayote into small cubes. Peel and cube the potato. Dice the onion finely.
- In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until it becomes translucent and soft.
- Add the garlic to the pot and cook for another minute, stirring continuously to avoid burning.
- Add the chopped chayote and potato, then pour in vegetable broth. Stir everything together and bring the mixture to a boil.
- Once it reaches a boil, reduce the heat to low and let the soup simmer for about 20 minutes, or until the chayote and potato are tender.
- Use an immersion blender to puree the soup until it is smooth and creamy. Alternatively, you can carefully transfer the soup to a blender in batches, blend until smooth, and return it to the pot.
- Stir in the vegan cooking cream and gently heat through (don't boil).
- Season the soup with salt and pepper to taste. Give it a final stir, then ladle the hot soup into bowls. Enjoy your warm and comforting chayote soup!
