Instructions

  1. Mix soy milk with lemon juice and let it sit for at least 5 minutes to curdle. This will act as a buttermilk substitute.
  2. In a large bowl, combine gluten-free flour, baking powder, vanilla sugar (or 1.5 teaspoons of vanilla extract), and salt. Whisk well to distribute everything evenly.
  3. Add the soy milk mixture, sunflower oil, and sugar to the dry ingredients. Mix well with a whisk until you have a smooth batter without lumps.
  4. Stir in vinegar and mix well.
  5. Preheat your waffle iron according to the manufacturer's instructions. Brush the hot waffle iron with a little oil to prevent sticking.
  6. Pour about 100-120 milliliters of batter into the hot waffle iron. Close the iron and cook until steam mostly stops escaping. Do not open the waffle iron during cooking.
  7. Melt the dark chocolate (microwave in 20-30 second bursts, stirring each time, or use a double boiler). Slice the bananas.
  8. This recipe should make 8-12 waffles. Serve the waffles hot, topped with melted dark chocolate, sliced bananas, and vegan whipped cream. Enjoy your delicious gluten-free waffles with delightful toppings!

Notes

  • Let the soy milk + lemon sit the full 5 minutes so it thickens slightly (better texture).
  • Gluten-free batters often benefit from a 5 minute rest before cooking—if you have time, let it sit so it thickens and cooks more evenly.
  • Cook until steam mostly stops; opening early can tear waffles and make them stick.
  • For crispier waffles, place cooked waffles on a wire rack (stacking traps steam and softens them).
  • Add toppings right before serving so the waffles stay crisp and the bananas don’t brown.
